Ricotta
The ricotta has very ancient origins: the first producers were the Egyptians and the Sumerians and in the following years it met widespread consumption also between the Greeks and the Romans. This product owes its name to the Latin ‘recocta’ or cooked twice: after making the cheese, the whey (liquid part) obtained is heated a second time.
