Buffalo Ciliegine
The cheese is sold in a variety of shapes, the most common are round.
The smaller size is called “ciliegine” are cherry-sized and “perline” (“little pearls”) are even smaller.
They are semi-soft, white, rindless und unripened mild cheeses, whose
origin is from Naples.
They are usually made from a combination of water and buffalo’s milk.
“Ciliegine” are packaged in a liquid containing whey and/or water, have a
spongy texture and absorb flavours.
